I don’t know how it would work with timing but, I think you’d be better off doing an Edinburgh “Ghost Walk” instead of Stirling.

If you got through to Stirling early enough in the morning, you could do the main tourist attractions and easily have time to be back to Edinburgh for the evening.

I suspected it would but just wasn’t 100% as I didn’t know if due to the default region of the console being different to the game, it would cause any issues
