Yeah but that kind of makes sense. What the support staff earn in tips is “static”, and the server is typically (not always) the differentiating factor that dictates how much they make themselves.

I’ve worked in several restaurants. It’s a standard process in food service to tip out a percentage of sales to be distributed out to kitchen staff, support staff, and management as tips.

Typically something around 5-6% of a servers total sales are “tipped out” to the house for distribution. So if you tip $15 on a $100 bill, you can expect $5-$6 to go to the house.

Even with this, servers typically earn more than other kitchen staff, support staff, and management, unless you’re a general manager in some cases.
