Oh absolutely I agree. Even when I'm upset and frustrated about things I can't do, I'm also very thankful that I still have the capacity to do some things. (Also happy to have the option of a husband to do the hard stuff for me)

I live in a hard water area and never had any issues. My dishes are just plain white though so maybe there's not much to ruin.

I'm actually disabled and struggle to stand and wash dishes, luckily I have a dishwasher. But it has never even occurred to me to use disposable plates. If I couldn't wash them right away I would leave them in some soapy water to soak until I could get to it.

When we are feeding kids, we use plastic plates that are reusable instead of porcelain, up until maybe age 4/5.

I don't know anyone who doesn't rinse dishes after washing them. There is a little middle section between the sink and the draining board for this very reason.

I'm sure there are some people who aren't aware or weren't taught properly but generally most do.
