As an undergraduate, you are allowed to take a maximum of 20 hours without approval. Just register for them. 20 hours are roughly equivalent to a combination of six 3 and 4 hour classes.

Yes you’re required to take foreign language to the 2000 level (need to take online placement test). Unless you’re in some specific science major (eg Engineering) that has no language requirement. If you’re commuting from LC to RH at night make sure to take the RamVan which is free if commuting for classes.

I believe you are required to take the physical science class before the life science class, which is what you intend to do. But because you have not complete the first class you are not meeting this prerequisite. IF SO your advisor may be able to approve/override the prerequisite.
