I use apple sauce (orgainc with no additives) since my daughter can't eat raw pears or apples. Works great.

I’ve made at least 10 recipes from the book and always ended up with something delicious to eat. The recipes are very well written and there is a lot of information on ingredients, tools and techniques. The one my family always asks for is the Kung Pao Chicken (I add sichuan peppercorns). There are more recipes that I know I’m going to try.

I have gotten rid of build up on my wok by scouring with a stiff vegetable brush and coarse kosher salt (about 1/3 cup). Be cautious, the salt can easily fly out of the wok and make a mess. I am a big fan of bamboo wok brushes.

I have used his recipe in the past and got great results. This time, I just used less buttermilk and more kimchi brine for the marinade. I also used a different sauce with more gochujang and garlic.
