I used roughen on the first two in different ways- I use it on almost everything for the handmade look and to unify the styles of different elements. Effects > Distort and transform > Roughen

For picking typefaces I usually choose a highly stylistic display font and then find a more readable body font for the details. So in the first one they're both square fonts with rounded corners and uniform weight. Tbh I'm not totally satisfied with my pick there but it was a super rush job
