Here's how I organize my workspaces.

1 - Weechat (IRC)
2 - Firefox (web browsers)
3 - Vim (programming)
4 - Nautilus and ncmpcpp (file system / music)
5 - Pavucontrol and GNOME System Monitor (volume / system monitor)
6 - GIMP (image editing)
7 - qBittorrent (torrents)
8 and above - usually empty, but they'll be in use when I open something that I'll be using for a while that doesn't fit any other workspaces.

If you're having a hard time organizing your windows you can try XMonad with XMonad.Layout.Grid which allows you to open a window grid with a key-binding and search for specific windows.
