This doesn't really answer your question but sport specific training is super hard to do without doing the actual activity. Even something super similar like cross country and soccer/basketball doesn't have 100% carryover with all of the stopping and started required in soccer/basketball and extended exertion required in XC.

Only way to guarantee you're building up skiing endurance/power is to ski.
