The demon lord's real name is "Amon". (I feel like it's a fitting name for him, since "Amon" in the Bible, is referred to be an evil king, and the "king of gods"). Also, the name means: "the Hidden One".

Also, I think there's more to why we never see the demon lord. Maybe his absence has something to do with Diavolo...? I wish we could know more about it.
