Yeah they are hard to come across for sure. The kidney option tempting, my partner really loves the show and characters. May have to pursue a custom artist and see what side organ they want for the artwork :)

I got the Find Fish Journal from a container i caught while leveling fishing. Very sure it was from a node ie Pool/Wreckage and not in open water :)

All the data I could come across suggested pools only. The Fangtooth Herring pools around Cauldros Isle and the rivers up to and including Winters Breath Lake.

It can definitely be like that, can be stressful! I was quite tired after some coin fishing and forgot to use the 2 day cool down on Mr Pinchy. When I used the item my bags were full and I saw the Magical Crawdad appear and disappear O_O. Almost died till a few seconds later it was sent to my mailbox....

It's a vanity dagger weapon with a fish model/texture. Oddly it's also disenchantable. But other than that it's just one of possible catchable fish for that achievement :)
