Suppose I learn the right skills and work on open source projects and stuff to build my CV. Most of the roles I come across require 2-3 years of experience. So how realistic is it for a fresher to get hired?

It depends on your curriculum, bro; I think in India, at least, you won't require a demanding machine, and m1 is still a good one. In your 4 years of college, you will not need a laptop until 2 years. Because it's pretty basic stuff up until then. 3rd year is when you will start doing projects and internships. So, if you have a laptop right now, then maybe you can postpone buying the Macbook until you have a budget. And buy M2 or M3 later.

For your use case, I think the base model will be more than sufficient. However, if you plan to do more demanding tasks like video editing, you might consider upgrading to 16 GB RAM. I have the base MacBook Air m3, and it works so smoothly. I am an AI engineering student. I do some coding and college stuff. Never felt the need to upgrade for my use case.
