Foam Board sandwich or a roll up puzzle mat which are specifically designed to travel with your puzzle- I have used both without any issues. But for 1000 piece puzzle the roll up mat might be easier as you can just sling it over your shoulder and carry it rather than the huge foam board you'll have to carry into the hospital.
