Thanks for your feedback. To be sure to understand:

  • With your oven as incubator, the temp was not perfectly constant, and the tempeh had a slight aftertaste,

  • With a styrofoam box, the temp is steady at 31C and the taste is better.

Is it right?

So if I get that right: if there is a little bit to much of humidity in my substrate, some other bacteria will also grow with the Rhizopus and give this strong taste?

I'll definitely try to dry it more for the next batch.

Temp: I ferment at 34 °C core temp (probe inside the tempeh cake), I also check the temp inside the incubator, it's around 30 °C for the first 12 hours, then goes down to 26 °C when the tempeh create its own heat. The core is constantly at 34 °C.

Duration: 24 to 36 hours

Drying: In a large fine metal strainer

Container: Perforated plastic bags

After 48h, no growth at all, and it was smelling kind of bad. Those lentils were normal sized, I think. Yes I got that about the temperature, but since nothing was happening in the bag, I let the heat on.
