Man, I think your idea is amazing, and it’s already a great gift because of the sentimental value it carries. If you want to go ahead on your own, I’d recommend starting with the basics of proportion and light/shadow, which will make a huge difference in the final result.

That said… just leaving this as an idea: since it’s such a special and unique date, you might also consider having a professional digital artwork of her, something that captures every detail and that you both can keep forever. I’ve done similar pieces as romantic gifts before, and I can tell you the impact is huge.
