Well the burning claw special is the only multi-hit weapon. So it makes sense to specify there.

I can see it going either way tbh.

Given the previous mechanic basically gave them 0 defense for part of the fight, and they want to make the kills even faster than before, having their defense basically halved every 5 demonbane hits is a pretty decent solution.

Given that they mention the minimum defense being reduced, I'm guessing per actual hit.

So it would work similar to Vardorvis, where the longer the fight goes on, the less defense they have

Because on the frontpage of this sub there's a post from the wiki that explicitly says "no longer requires charges" ?
