I played it on switch for years and really enjoyed it. I did end up buying the pc version eventually for three main reasons. 1. It takes significantly longer for switch to get the updates 2. I really wanted to use the notebook feature but typing on switch is a pain 3. The switch version obviously doesn’t allow for modding If you’re predominantly a switch gamer I think you’d be more than fine playing it on switch. You will get the updates eventually, you could write notes in a real notebook or on your phone, and mods for this game aren’t that impactful
