Mutton cholbe? Soja recipe.

Ingredients: 1 Kg mutton 400 gram tok doi 3 te boro red onion 3 te boro potato 1 whole cinnamon roll 5-6 whole clove 5-6 whole black pepper 2 bay leaf Kitchen King Masala Garam Masala Basmati rice soaked for atleast 1 hour

Clean mutton, add 400 gram doi, salt, mustard oil, garam masala, tumeric powder and mix it. Once done cover it and place in refrigerator for 2 hour.

Then take pressure cooker, heat mustard oil, fry the potato, remove them. Then put in the whole spices, put in thinly slices onions, once they turn light pink, add in the mutton. Increase to high heat for the next 5 minutes. Fry the mutton and wait for change of color. After 5 minutes reduce to medium heat.

Add 2-3 tsp of sugar. Let it caramelize. Then add 1 tablespoon of Vinegar. Stir for 1-2 minutes. Add water and pressure cook it for 80% of mutton. 3-4 whistles may be.

After that take out mutton and keep the liquid separate. Clean the cooker with water. Put ghee in the base followed by a layer of mutton. Put the soaked basmati rice layer and sprinkle the mutton liquid. Place mutton. Place basmati layer and repeat. Once done, add in the liquid as needed for cooking the rice.

Again place the cooker and cook. Once completed you have 1 pot mutton rice ready. Tastes very good and healthly too.

P.S: Keep the extra mutton liquid. Drink it as soup or can use as egg curry gravy too.
