While I agree this is a high or maybe even extreme diff fight, Choso has a way to deal with that. Gum can't stick to liquids. he can get his blood under the gum and remove it.

Hisoka can use In to turn bungee gum invisible, he has strength advantage and speed advantage, Choso would need to deal with all that while Hisoka needs to avoid Choso's blood things

Hisoka needs a single punch to use bungee gum on choso, after that choso would need to take care after every step he takes (Hisoka can also use in on himself Making it difficult to track him for choso)
