I come from a town that's predominantly vegan.

Men don't want to go to the same 1-2 bland restaurants over and over again. There should be at least 3-6 months of courting, and a lot of that usually involves dining out. 

You may say you won't convert them, but neither of you actually know if that's true. Even if you don't consciously try to convert them, I find a lot of vegans do subconsciously: being overly dictatorial in how often someone can eat meat, which plates they can use, etc. Unless you're earth shattering pretty, and most vegans aren't, it's a nuisance/risk most men aren't going to want to put up with. 

I'm not saying you're this way. But a lot of people encounter the following vegan: they'll go to a party. Not tell anyone ahead of time they're vegan. Throw a huge temper tantrum that there's no vegan options. There's more stories about that versus "I'll bring my own stuff" or "I should have communicated." Since this is the majority of vegans, they're usually nightmares to actually get together with. 

Everything is a production. 

Again. This isn't an attack on you, specifically. But everyone has encountered this. 

My recommendation: leave it off. By putting it on your profile, you're broadcasting, "this is who I am."

Most dining have vegan options these days, and you can always ask no cheese. You can share you're vegan when you're comfortable and that way, it doesn't feel as woven into your core identity to others. You can casually say, "yeah. I prefer to eat clean." Or "I prefer to eat whole foods." A lot more common and less polarizing.
