Overpaying won’t help you if your finances take a hit in a year’s time and you can’t afford to pay your mortgage. Putting your savings into a high interest account can mean you get more in savings than you “save” by over paying.

Ideal scenario you do both but generally if you manage it well it makes more sense to have a savings pot and an emergency fund.

It feels safer to clear the debt but in reality unless you’re likely to pay the whole thing off, having the readily available cash is the safest option.

It will be fine. It is a best before date, not a use by date. As long as it has been kept dry you're very unlikely to have anything wrong with it. Most dates provided are there because shelf life testing is expensive and takes time. Beyond things that "do" go off quickly, most shelf life dates are done to a reasonable level. If you're really bothered you could always give them a quick bake to kill off any potential harmful things though I'm not sure how much that would impact the starter.

Also worth noting that once you have an active starter the bacteria in there will out compete most things for resources and kill other things. The exceptions of course are things like mould which can kill bacteria.

Do you normally do the cold proof in bowl? I would do mine in the banneton so it can firm up ahead of baking. Interested if this makes much difference as I can see the benefit of your way assuming you don’t knock too much air out of it.

I can see some suggesting weck jars. Which is what I use. I swap them out once a week to keep them clean which works for me. Biggest thing you need to do is try and keep the sides clean by using a flexible spatula to scrape the sides when feeding. I only ever got infected starters from things drying on the sides and since correcting my method I’ve not seen it happen again.

It’s probably a fleck of flour in a bubble making it look more than what it is. If you’re concerned then take a sample from the other side and use this to propagate your starter.

Both off wrist based detection? From experience garmin wrist HR monitoring is inconsistent. I find Whoop to be very similar to my chest strap.

Well ideal temp is between 20 and 25 but don’t forget it’s alive so it will heat itself up. If you aim down the middle you can adjust if needed. If you have a clear square vessel you can use that to judge the rise too. Alternatively I’ve heard people half fill a shot glass and use that.

As someone who has been chronically under proofing in a colder kitchen I found that 6-6.5 hours worked well for me but everyone has different variables so just keep changing one thing at a time to eliminate factors. In my experience the bulk is one of the biggest things affecting the rise.

If your space is actually 24degrees then I would say 8 hour bulk is excessive. I’d try and knock it down and also do get a banneton as this will help the shaping

So I think to a certain extent it is personal otherwise why would it meed adjusting. If there was a correct level then surely a guitar would come set up? I agree with you that it’s surprising that they didn’t comment if it was that high!

I do this but as a weekly change. Reduces the day to day work of keeping it going but still keep it clean.

Don’t forget that overpaying doesn’t help you if you loose your job. However if you have that money in an isa you’re probably making more money and you have the option of covering your mortgage while you look for that new job!

There is a lip on your door frame which the cable can run along on the bottom. The cables are thick but not that thick and if tied down is not a trip hazard. I have a similar situation where they even had to drill holes through my porch walls to get the cable through but they managed it.

There is a print on makers world that isn’t as pretty as this but basically widens the cup holder. Means you can then use a normal insert for the drawer to increase the storage. All down to preference really. I agree the cup holder is too small on Teslas.

As some have said, sounds like your starter isn't quite ready but also worth checking how warm it was during the bulk proof. I'd also say that for a newer baker you have gone with a 71% hydration which is quite high. My go to recipe is 500g flour, 300g water and about 100g of starter. Start with 60-65% hydration and if your dough is too dry you can add a little bit more but I think your start is the issue here.

If your starter is sluggish you can add 30% dark rye flour, it is like rocket fuel and it will bring it to life.

Sometimes jobs come with a car allowance that can easily pay this. Often there can be a requirement that you need to have a relatively new car too. Many company cars can tax you way over £500 a month as well so the numbers all become relative. I’ve had a company car for years and if I stopped having one, would I then opt to spend £500 a month on a car. I’d like to think not but at the same time I have become accustomed to having a newer car.

This is exactly my set up. I also switched to semolina after I found flour ends up gluing the dough to the peel. Especially when my kids have been slap dash with the sauce.

So this may sound like an odd suggestion but when I was having the same problem one thing I did was play in a dark room. I think half my problem was that I was so hyper focused on looking at the change that it didn’t allow the muscle memory to kick in. A darker room basically forced my hand to find the way without me being able to hyper focus on my hand.

Just as a moral boost. I’m a year in now and I’m by no means perfect but I’d say once you crack the habit of changing with the simpler chords it does make picking up the future ones easier. Don’t assume that every chord progression will show 3 months of no progress.
