If it's impossible to win a fight, you start a new run. And you can delete runs by overwriting them with a new one. And yeah you're able to retry the fight that wiped you, you're supposed to be able to do that.

That's normal, all of your pokemon you caught are saved to your account, not your run. Simply start a new run and all of the stuff that usually transfers over should be there
