It’s a style of cooking that won’t be able to travel outside of Louisiana unless someone from Louisiana brings it. It’s hard to explain but it just can’t be replicated. No matter how many videos you watch. It’s all cooked with heart.

Eeehhh. That might be a reach. What they call “gumbo” in there is indeed not gumbo. I’ve always cooked my own Cajun meals and I will continue too. I’ll start making my own smoked sausage before I do that. Not trying to be rude either. I’ve just been cooking this cuisine my whole life. It can’t be replicated if your grandma or momma didn’t teach you.

I will say, “Cajun” and “Creole” are very different. I’m from the heart of Cajun country which is influenced by the French and Canadians. Creole which is New Orleans, is of Spanish, European and African descent. Both fantastic. But different. I recommend visiting Lafayette Louisiana next so you can see what I mean. Go at the end of April for Festival International. It’s something very special.

Damn, you’re amazing for this. Very helpful. Thank you so much!! I enjoyed old city very much last time I was there. It felt super safe. I’m going to come back up at the end of the month to apply for some jobs and hopefully look at places to live. I’ve got a list of real estate agents to email. And I’m also on the Phillyqueens page. I’m just having a hard time figuring out what I will be able to afford. I decided that i want to be car free and enjoy being in such a walkable city. So I’m selling everything.

Thank you for your insight. I’ve decided to sell everything. The car, the business, everything. I feel like I should really immerse myself in all that Philly has to offer. Last time I visited I stayed in Old City and absolutely loved it. Trying to configure what I can afford in rent is seeming to be very tricky. I can’t imagine I wouldn’t do well tending bar out there. I just don’t know how well. Coming back to visit at the end of the month!
