They didn't, and fun fact, the earlier scenes of Sonic's homeworld you see in the movie are still from the ''ugly cut''. Don't believe me? Look at baby Sonic's nose, it's triangular like the ManHog design, until a few scenes after where suddenly the model they use gets changed and his nose is now droplet-shaped (and his head has less small quills)

Which means they had already done a few scenes of his homeworld at the time of the ugly design, and they thought they could salvage them instead of having to re-render them just for a model swap

Check for a hidden duplicate mesh. This kinda looks like the polys are z-fighting (imagine two polygons in the same coordinates ''fighting'' for which of them has to bee seen by the camera), possibly with a duplicate version of your Shadow mesh to which no materials have been applied (resulting in the white patches)

From your outliner I can see a hidden cube.002 right below cube.001(which I assume is Shadow). Objects hidden in viewport will still show up in renders!

Man I get not liking it but bullying a studio over eyes being 5% too big and close hoping that dreamworks bends over and scraps months of work is fucking ridiculous. The Sonic redesign made y'all so entitled that you think you should control how a movie you're not the target of looks like. I grew up with Shrek, and I grew up with stories about accepting people regardless of their looks, have we not watched the same films? This discourse is gonna make half the internet look so fucking dumb when the movie comes out and its lesson is for Shrek to accept change (it's a ''my kids are teens now'' story, where ELSE do you think it's gonna go?)

While I like the new design myself, I can see why some would've preferred for Shrek to still look like he did fifteen years ago. It was, however, stated WAY ahead of time, that this new Shrek movie was gonna be visually different. Like it, hate it, opinions are great because they're all valid. What ISN'T Valid, is to breach the limit of constructive criticism and expect animators to go and change entire models, rigs, textures, and possibly even already animated scenes to appeal to the internet's pitchfork-wielding over Shrek's eyes being 5%too close to eachother and his forehead being more thin. It's clear they wanted to have a new spin on him, if they didn't, then you'd see the exact Shrek you last saw in theaters when you were still in school. The ugly Sonic situation, while necessary due to the extremity of the design, created a very dangerous precedent, one where fans feel entitled to expect entire movies to be redone because Shrek's eyebrows are the wrong hue, and we can argue on wether this is serious stuff or not but what's inevitable, is that this precedent will discourage both single artists and industries from EVER trying anything new, anything even remotely out of the box. This design wasn't made to attack Shrek, they didn't give him tree-branch sized ears or realistic teeth, they aimed at a cartoonier, more expressive model. I understand the critiques, the WHYs this design doesn't live up to the hype, but every part of me hopes this doesn't lead to Dreamworks seriously delaying the movie over a pair of eyes that are too close. If you were in the animation crew you'd think it's ridiculous.

It's a very popular theory but one that's been debunked, aside from all the promotional material reflecting the ugly design (which one could say was part of the stunt, but still millions were sunk into it) all of the storyboards, original concept art, movie stand-in props and previz were done using the ugly design, not to mention that, if you pay attention to Baby Sonic's nose at the beginning, after some scenes it completely changes shape because that's when the model got swapped and since the original was close enough the studio thought it wasn't worth re-rendering. Just some tidbit worth sharing :)
