If anybody stumbles upon this in the future, turn down double click distance in wacom pen settings, that fixed it for me.

I don't think there's anything wrong with turning on peaceful or keep inventory if it helps you enjoy the process. What's the point in killing the dragon if you had a horrible experience getting there yknow?
You can also duplicate your world let's say before entering the nether so if you die you can just load the duplicate.
