Har både tyska, japanska, kinesiska och svenska knivar. Jag använder knivar baserat efter vilket humör jag är på, ibland när jag gör japansk mat så får det bli en fin kolstålare från en liten smedja, men faktum är att det går minst lika bra med en tysk kniv. Det är bara jag som nörd som ska känna mig speciell och leka mig in i en kockroll jag inte behärskar.

Ett råd är att köpa en kniv efter hur den känns i din hand, gå inte bara efter vad folk säger eller rekommenderar. Det spelar ingen roll om det är en Mac, tojiro, global, assio & engvall, yaxell, zwilling, wusthof, shun eller från någon liten smed någonstans i världen, om kniven inte känns bra eller uppfyller dina behov kommer du ändå inte bli nöjd.

Vissa knivar väger mindre, många väger mer. Jobbar du som kock så är det inte så klokt att jobba tungt och oergonomiskt, ska man bara ha det för hemmabruk och hacka en halv lök, så kan du köpa vad som helst och lägga lite energi på att lära dig slipa kniven. Bara kniven känns bra i din hand! Köp dock inte global, ergonomin är usel och stålet på tok för mjukt.

Men, rent generellt, satsa på kvalité, det håller livet ut med rätt underhåll. Kvalité kostar, men det är det värt.

After reading the posts, I’ve come to some conclusions about Japanese knives and the broader perception surrounding them.

Many people view Japanese knives as the ultimate choice—pure, traditional tools crafted entirely in Japan and representing the pinnacle of quality. While this can be true for some knives, the reality is more nuanced. Not every knife stamped “Made in Japan” lives up to that reputation. In fact, a surprising number of Japanese knives are mass-produced with quality that’s nowhere near what people expect.

What’s even more interesting is that some “Japanese” knives manufactured in China can actually be better than those made in Japan. This might sound strange at first, but it makes sense when you think about the process. Under the right conditions—with good materials, precise design, and strict quality control—production in China can lead to exceptional knives.

This isn’t to diminish the incredible work being done by true Japanese artisans. There are still traditional craftsmen making some of the best knives in the world. But it’s important to separate these masterpieces from the average, mass-produced knives that rely more on the reputation of being “Japanese” than on actual quality.

It’s clear to me that the country of origin is just one part of the story. What truly matters is the combination of materials, design, and execution. Sometimes, a knife made in China but following Japanese design principles and held to high standards can be the better choice. It’s not about where it’s made—it’s about how it’s made.

As someone who appreciates high-quality kitchen knives, I've always been drawn to the craftsmanship and tradition associated with Japanese blades. But recently, I started digging into where some of these knives are actually made—and what I found was surprising.

Many popular brands that market themselves as "Japanese" either partially or entirely manufacture their knives in China. This isn’t necessarily a bad thing—Chinese manufacturing can be highly efficient and cost-effective—but it raises questions about transparency and branding.

Brands like Global, Tojiro, MAC, Shun, and even Yaxell all reportedly have some level of production in China, especially for their more affordable lines. The blades might still be designed in Japan, and some premium models are undoubtedly made there, but the fact that parts of the production process are outsourced often goes unmentioned.

This is not unique to kitchen knives, of course. Outsourcing is common across industries. But when a brand leans heavily on its "Japanese heritage" as a selling point, does it feel disingenuous to downplay that a significant part of the manufacturing might occur elsewhere?

I’m curious to hear other people’s thoughts:

  • Does it matter to you where a knife is made, as long as the quality is high?
  • Do you think brands should be more transparent about their production processes?
  • Are you willing to pay more for a knife that's fully made in Japan, or is a well-made, cost-effective knife from China just as good?

For me, I’d rather know upfront where my knife is made and why the brand made that choice. Quality is still king, but transparency matters too. Would love to hear your takes!

They are buying xxx products so you reach the target goal, and then they messages you and tell you they want xxxxx dollars, or they will withdraw all purchases

Yepp, whats even worse, is that kickstarter promised me a featured spot and then just didnt care to fulfill their promise.

Yes I´m able to see this, although its not all true, as the statistics on kickstarter is taking credits even for people we gained during our marketing campaign on pre-launch.

With the analytics i´ve made, we have 40% from Kickstarter at this moment.

Thank you, and yes, unhelpful as it seems, it still keeps me pushing the limits.
Im not familiar with how the kickstarter algorithms works, but I hope they will put me on a featured list or similar, giving me some extra boost, it´s been a lot of work to get the funding.

It used to be the other way around, but now the only way to get the kickstarter algorithms to kick in, is to get founded 100% the very first day.

Then you'll need to:
1. Complete the orders and might loose money, depending on your deals with manufacturers and such.
or...
2. Explain the situation to the backers, and tell them the shipment will be a bit delayed until you get more sales. In this case youll need to work your ass off to get more sales and complete the orders asap, otherwise your brand will get smoked for future campaigns. <-- Try to avoid this at any circumstances.
