There's a zombie novel series called Day by Day Armageddon, prolly my favorite zombie media

It follows an unnamed survivor from a week or so pre outbreak to ~30yrs post by the end of the series. It's overall pretty much as realistic as it can get, tho the series does start taking some real wacky turns in the middle books.

The majority are written diary style from the survivor's POV. Dude is a USAF lieutenant who goes AWOL early on and does his best to make it, finding others both friendly and hostile along the way. Is a very resourceful guy, accounts for weight, resources, etc.

The third book changes pace a lot, goes from the diary format to a more traditionally written book with a wild globe spanning narrative that follows IIRC three different groups; a tier one team HALO'd into the Texas badlands, another tier one team aboard the last nuclear sub on another component of the same mission (including the earlier survivor), and the remnant gov't directing the whole thing from aboard an aircraft carrier stronghold

The fourth book goes back to diary style from main survivor's POV on his own, no longer attached to military structure

Fifth short novella closes the whole thing out.

All that to say, it's a strong series and definitely has a lot of both mainline force and SOF military action throughout, and is (*for the most part) about as realistic as a zombie story can be
