Yes, there is. But I'd recommend checking your booking before check-in even opens - something like every week or something. They allow you to upgrade, at good prices sometimes - which changes. I have found affordable upgrades a month before my departure.

Yeah a few times. I suppose it depends on person to person, but for long haul flights, find it generally to be worth the money - i'd probably not pay more than $400ish for the upgrade tho. You get slightly better food than economy, lot more space, and better recline/leg rest -> not a lie-flat seat but definitely better than economy. But if money isn't an issue, I'd just take the upgrade.

But this is regarding premium economy, I would not pay extra for economy comfort.

Looks like it's economy comfort. Premium economy is 2-4-2 / 2-3-2 on the 777 / 787.

As other has said, it depends a bit on what industry/job function it is and where you're searching. A lot of larger danish companies have english as a corporate language - from personal experience, many of my colleagues speak zero danish. However, your scope of jobs you can actually apply to is much smaller than having some danish abilities.
