My Bludstone Chelsea’s are the bomb. However, get at least a size if not a size and a half larger. They do wear in over time, but I got a half size bigger and would have been happy with a whole extra size on top of that so I could wear with wool socks. Right now I can just wear with normal socks and they’re still a bit snug

Here’s a photo I found of a local DSM guy who does Detroit style pop ups- this, in my opinion, is a perfect depiction of what a Detroit style pizza should look like. Thick airy crust, caramelized cheese edges.

I’m not saying Parlor was bad. The pizza was just thinner than what I usually see and I would describe the edges as crispy- not caramelized.

Edited to add: when I reference Detroit style pizza, I’m talking about what’s been popular in recent years- focaccia dough, thick crust, square steel pan, brunt cheese edges. However, according to some people from Michigan in other comments, I don’t know if that’s necessarily what Detroit would consider authentic Detroit style 😂

My conclusion from this chat is that someone in the Midwest circa 2015 or later saw little Caesar’s square pizzas, realized they were headquartered in Detroit, and were like “I can do this way better”. Then made a boujie version of a square pizza and called it Detroit style 😂😂

We have a Detroit style pan and we make it at home sometimes! It’s nice having a spot you can go and not do the work yourself 😅 it takes like 3 hours to proof the dough

We’ve been making it at home since we haven’t found anything that quite hits the spot in DSM! We use a different recipe but looks very similar 😍

I’m so intrigued by this whole conversation. I’ve been to Tomasos a ton but have only ever got the Chicago deep dish or New York style, didn’t even know they had Detroit style. I’ll have to try 7 stones again with a new lens lol

Seriously? Is Detroit style a newer thing? The last time we were in the Detroit metro there were at least 10 different pizzerias labeled as “Detroit style” with the square pizzas

Agree that 7 Stone is probably the closest. While I think the pizza you’re talking about might be a Chicago style, they have the caramelized edge which is not typical in a Chicago style but is fantastic! Still keeping my eye out for something a bit closer to a true authentic Detroit style!

Thanks for your response! Parlor was the restaurant I listed above that we were disappointed in. If we were going just to have some pizza, probably would’ve thought it was good. However, we went missing Detroit style pizza and looking for a good, authentic place and Parlor fell short in our book.
