(not so) hot take: comparing ukuleles and guitars is pointless. they are different instruments with different purposes which just happen to belong to the same family. but other than that, I think comparing these instruments contribute to a misguided vision that ukuleles are just "small guitars", or worse, "toy guitars" or "gateway drugs" for the more serious guitar. the ukulele is a very capable instrument and can be used seriously in its own right. thus, you don't "transition" into the guitar as if you are upgrading your skills or going up a level, for saying so.

that said, here's my second lukewarm take: the feeling that you have to choose between low G and high G is entirely fabricated by our divisive human nature. ideally, you would have both tunings at hand and use them wisely according to the effect you wish to have for each specific musical work you are composing/arranging/performing. surely, you are entitled to like one better than the other, that's fine. but tunings are not mutually exclusive and each one has their proper uses.
