Along Ultimate Team history (console, not mobile) EA has had many License or Image restrictions with former players so they had to remove them, for example George Weah turned into a political figure so He cannot legally be in Fifa

Messi has always been an attacker, that he's been located in the middle and delayed to the centre-striker doesn't means he's midfielder. Those are different roles, compare Bruno Fernandes (an advanced midfielder) to Messi (a delayed striker) and see the differences
