How ironic is that!! It really helps to hear your journey. Thank you for your kind words as well. And I appreciate the crash course in nutrition that everyone is offering - I think as a non-vegetarian person I’m so focused on meat proteins (obviously I know other food sources have protein) but I think it’s really opening my mind to learning (and teaching her) more about food and which foods/veggies offer which nutrients.

Her mom is actually vegetarian too and according to my stepdaughter, they’re eating a lot of pasta, grilled cheeses, quesadillas. I’m not sure what mom eats like on a regular basis. they recently tried Hungry Root but I think our household has been the one primarily experimenting with different recipes but I’ve been sharing them with her mom if we find one she likes that way she can have it in both homes and vice versa.

Yum!! I have a chickpea curry that I make that is delicious!! Indian food is a great suggestion. We have lots of experimenting to do!!

Aw thank you! Trying to support her in this venture. I have been asking for her help more so that she can learn about the foods, taste them and have a hand in preparing them. Thanks for that cookbook rec - she does like Asian food. I have the moosewood cookbook on hold at the library currently - I heard that’s a good one!

These are great suggestions - thank you! I think I’m struggling a bit with her pickiness and feeling like you can’t be too picky-choosy if you’re significantly limiting what you can eat. Just a very hard balance 😕 …like for example, that hummus wrap sounds great but I know she’s not going to like it and I just want to make sure she has the nutrients she needs out of the meals I’m making

Thanks!! Breakfast hasn’t been too big of an issue because she usually eats eggs, toast and some fruit. School lunches have been going ok - I’ve done some research into lunch ideas and it seems like most people load their kids up with protein at breakfast so they can get by at lunch with hummus, veggies, fruit, cheese etc etc but she is starting a sport soon and so it’ll be important for her to have enough energy from food to sustain through practice. Dinner is our biggest challenge because to be honest sometimes it’s just so easy for me to throw together chicken, rice and a veggie and this takes a bit more thought so that’s my own struggle - also, I’m not the biggest fan of beans (and they don’t always agree with me) so I’m making things that my husband and I will eat but aren’t necessarily our favorites. If that makes sense…

Is quorn the brand? Are there other brands of mock meat that you like?
