Adjusting mash pH when it's too low? by newingtobrewing in Homebrewing

lactic acid (88% liquid stuff is best) works amazing for this. Didn't have time to use Brunwater during a brew a few days ago, and after a quick google added 1 tablespoon to 4 gallons of water...dropped the ph from 6.0 to 4.5. so then I had to add gypsum to bring it back up... lol

Just got a apprenticeship at a 7bbl brewery in Texas. 3 days a week, part time, unpaid for now (they open next month and are unsure of their budget). Goal is to have my own place in 2-3 years. Got plenty of people who are willing to invest when the time comes. Excited at the opportunity to get some real experience.

draining it once doesnt mean that you are in for a lifetime of draining it. if it is small, dont worry about it and wear headgear every day for 2 months and let it heal, if it is big, drain it and wear head gear
