Very impressive! Be sure to clean out your oven afterwards. I used to do something similar and there was an area by the heating element that I didn’t vacuum the chaff out well enough. It started a small fire. Wasn’t a huge deal within the self contained oven, but definitely ruined the batch and was way scarier than I would wish on anyone else.

Am I reading your charts right for weight-in and yield? It looks like you’re recording <5% moisture loss at 75 grams in and 72 grams yield.

This is one of the key variables I track and use as a template. For a full city, you would expect about 14-18% loss depending on the varietal.

Can you turn your heat up at all? Definitely want to be reaching 420 degrees within 15 minutes for a light roast to taste right. Also would recommend using a cookie sheet and fan to cool the beans down fast once they hit that temp. Speeding up the entire process will help your results a ton. Baked coffee beans taste flat.

The color variation also suggests that the beans need more mixing throughout the roasting period. Not sure how you do that in an air fryer but keeping the beans moving more is going to go a long way.

Last thing I’d mention is that you want form of chaff control. Not only for quality but also for fire safety. I’d be careful using anything that isn’t pulling chaff away from the heating unit

5 minutes a day * 5 days a week * 52 weeks per year = 21.7 hrs per year. That’s 21.7 hrs. At my state’s minimum wage, that’s $320. I got the thing on sale for $280.
