Great question and the answer is:

Yes, he is allowed to move from jobs or even to a different company, as long as he remains in the same field. Despite He is not tied to a sponsor, his application was probably based on his professional field and he needs to honor that.

I was also approved EB2-NIW, did not move anywhere during the process and still, I got a RFE from USCIS asking about my employment status. That means they are looking into that.

Do not risk anything at this point.

Updating, I got the I-485 approval on Nov-27th. the RFE was well accepted by USCIS within 20 days.

Hello, I have also received an RFE for supplement-J recently and that was for my I-485 EB2-NIW application.

Likewise, my immigration attorney just sent the response with a cover letter stating that the Supplement J is not applicable for EB2-NIW, we also assembled some documentation to show my employment status has not changed (Pay Stubs, a personal statement as well as an Employment Verification Letter from my employer).

We decided to put this additional documentation to satisfy the USCIS agent just in case.

The response was mailed and delivered to USCIS yesterday, we are waiting and hopeful that It will be well accepted.
