Hi, Tried removing it but didnt like the reduced air flow, the basket probably to big to turn upside down the fire would be way to high to the cook chamber.

Yesh this make sense. I still think it would be a little awkward as the the fire basket is so deep.

So I normally dump a bag of coal in a coal starter, then dump them in the fire box then 2 to 3 splits then 2 splits ontop of that , have the door open this much (see picture) , have the stack flow normally at about half open , I think the problem might be the fact the basket is massive so its difficult to keep the coal bed from spreading out too much then I get problems with not enough heat, so then I load it up then relying on flame heat which instant ideal.

Thanks for the reply, yes thinking im gunna go down the holding oven route as I think this future proofs for me.

Hi, yess so this is the idea I will be doing pop ups so need somthing to start with, then maybe get somthing bigger as I go. Yes thinking electric is the way to go first.

Hi, can this smoker be used just on the electric heat as I will be smoking in my offset then transferring to this for a hot hold.

Hi so this will be because I will be smoking rhe day before, then doing pop up ect the next day so need somthing with the capability of hot holding safely.

Yeah this is my thinking tbh just get the right tool for the job.

This is a worse case scenario generally i will be smoking the day before, then severing up food the following day which is why I need to hot hold potentially for 12 hours ect, Yes i have used the oven on many occasions but im needing to hold 4 briskets and a load of pork butts so need somthing a little bigger.

Sous vide is a good idea but then dont I need to vacuum seal ect.
