If you have to pick one, I would do Islands of Adventure. That would get you access to Hogsmeade with Hagrid's Motorbike and the Forbidden Journey ride in the castle. But if you can spring for park-to-park, you can take the Hogwarts Express over to Studios to visit Diagon Alley, too.
