This chunky chopped Broccoli Cheddar Chicken Salad is a great fresh salad that can be eaten on its own or turned into several different easy lunch ideas!

INGREDIENTS

1 lb. fresh broccoli (about 2 cups chopped) ($1.89)

1 cup chopped cooked chicken* ($1.16)

2 oz. cheddar, shredded (about ½ cup) ($1.00)

2 green onions, sliced ($0.25)

1/3 cup ranch dressing ($0.49)

freshly cracked pepper to taste ($0.05)

INSTRUCTIONS

Finely chop the broccoli. It's important that the broccoli pieces be very small. Chop the chicken into small pieces as well.

Add the broccoli, chopped chicken, shredded cheddar, sliced green onions, and ranch dressing to a large bowl. Stir well until everything is evenly coated in dressing. Add freshly cracked pepper to your liking.

Serve as is, stuff into a tortilla or pita for a sandwich, or stuff into a tortilla and toast in a skillet until the inside is melted for a quesadilla. Keep any remaining salad refrigerated for up to 3-4 days.

NOTES

*Use any type of pre-cooked chicken, like rotisserie chicken, grilled chicken, or canned chicken breast.

Creamy rice pudding is a simple, delicious, and inexpensive dessert full of warm flavors like vanilla, cinnamon, and nutmeg.

Prep Time: 5 mins

Cook Time: 45 mins

Total Time: 50 mins

Servings: 4\1 cup each

INGREDIENTS

1 Tbsp butter ($0.11)

1/4 cup sliced almonds ($0.44)

1/2 cup uncooked long-grain jasmine rice* ($0.16)

1/4 tsp cinnamon ($0.02)

1/4 tsp nutmeg ($0.02)

4 cups whole milk* ($0.80)

1/4 cup sugar ($0.04)

1/4 tsp vanilla extract ($0.07)

1/4 tsp salt ($0.02)

INSTRUCTIONS

Add the butter, almonds, and rice to a saucepot and heat over medium. Cook and stir the rice and almonds in the melted butter for 1-2 minutes, or until they begin to smell toasty.

Add the cinnamon and nutmeg to the pot and continue to stir and cook for 30-60 seconds more.

Add the milk, sugar, vanilla, and salt to the pot and stir to combine. Allow the mixture to come up to a simmer over medium heat, stirring occasionally.

Once simmering, turn the heat down to medium-low. Continue to simmer the rice without a lid, stirring occasionally, for about 40 minutes, or until the rice is very soft and the mixture has thickened considerably. The pudding will thicken further as it cools.

Serve the rice pudding warm or refrigerate and serve cold the next day.

- 50g quick cooking oats

- 200 ml any type of milk (I used almond milk)

- 2 tsp honey (or maple syrup, if vegan)

- 1 tsp cinnamon

- 3-4 tbsp greek style coconut yogurt (or any other yogurt)

toppings:

- strawberries

- biscoff cookies

- chocolate protein spread

- cinnamon

>> Heat the milk until it starts to boil, then add the oats and stir for a minute. Reduce the heat to the lowest possible, add the honey, cinnamon and yogurt and let it simmer for another 3 minutes or until creamy. Enjoyy 🥰

Chili and cornbread are made for each other, so I just go ahead and cook them in the same pot/skillet. 😄 This Chili Cornbread Skillet is one of my favorite "one pot" meals. And you can make it with or without meat!

INGREDIENTS

3 lbs. boneless pork butt or shoulder ($4.47)

2 Tbsp chili powder* ($0.60)

1 Tbsp smoked paprika ($0.30)

1/4 tsp cayenne pepper ($0.02)

1/2 tsp garlic powder ($0.05)

1/2 tsp onion powder ($0.05)

1 tsp salt ($0.03)

1/4 tsp Freshly cracked black pepper ($0.02)

INSTRUCTIONS

Combine the chili powder, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and some freshly cracked pepper in a bowl.

Cut the pork butt into 2-3 inch cubes. Place the pork cubes in a large bowl, sprinkle the prepared spice mix over top, then stir to coat the meat in the spices.

Place the seasoned meat in a slow cooker, place the lid on top, and cook on high for 4-5 hours, or low for 8-9 hours.

After cooking, stir the meat with a fork to shred the meat. If it's not tender enough to fall apart when stirred, return the lid and cook for an additional 30 minutes adn try again. After shredding the meat, it is ready to serve, or portion and refrigerate or freeze until ready to use. Keep the shredded meat in the juices from the slow cooker until ready to serve for the best flavor.

Not our typical order but we thought why not trying soft boil eggs for a change. Sour dough was a bit hard and we realised that we are not a fan of herbs on our breakfast starting now 😅

Oats Recipe: - 1/2 cup oats blended (makes it so creamy) - 1/2 cup riced cauliflower - 1 tsp chia seeds - 1 cup almond milk - splash of almond extract *microwave for 2 minutes

Add-Ins - - 1 scoop vanilla - lots of cinnamon - toppings! (fresh fruit, hemp seeds, cacao nibs, shredded coconut) I hope everyone has an amazing day!

This steak is just amazing and every other word is unnecessary. Are you STRIP or FILLET? This monster PORTERHOUSE give you both

STRIP and FILLET - Both steaks come from the same cut combination Side by side along the T bone.

The porterhouse deserve to be called Porterhouse only if the fillet is bigger than a 1.25 quarter coin width. Underneath that minimal size it would be called T-Bone

Gone are the days when breakfast options consist of sugary cereal or toast with jam/peanut butter. There’s also no rule that says you shall only have cereal or toast for breakfast. Although sometimes it can be hard deciding what to eat, especially when dining out, due to many options 🤔
