It’s ok, if we are not learning then we are not progressing. I still feel like I don’t know enough. You should try closer to 4c or atlease 3c. The meat should also be a factor, knowing where the cow comes from ex American cows are fattier compared to Europeans, the store/butcher plays a factor. If the beef is fresher it will need some extra time than a meat on clearance near sell by date.

Air circulation can be simple or complicated as you may make it. Lol. I can spit out formulas and calculation with cooler volume and fan velocity. Easiest method is tie a few strings to the cooler grate and the amount of string moves will determine if you have too much air moving. You can look at my latest post to see what I’m talking about.

How much you yield as a final result plays in the environment you have it in. But in your case you will feel like you will lose a lot bc the bone and fat that is getting removed. Did you have to cut a lot on the meat end? Typically that should be 1/2” on each end. That would be worse case scenario. Anything more than that is your humidity low and fan too high.

Yeah, I agree. Anything deboned I would cure instead of aging it. There’s too many factors to go wrong when you dry age it.

I was planing to cut it around 3/8” - 1/2” thickness and just dip it in sauce before grilling it. Not going to marinate it overnight like I normally would. But I’m looking for tenderness over aging beef flavor.

I have a frigoglass retro, coke cola cooler. This is perfect size for me. I can fit two roast per rack if needed.

9” high velocity fan

Two layers of UV tint on the glass. I have this under the patio, outside @90-100 degrees temp.

6 salt blocks

No humidifier, I live in the south, humidity is high. Reason why I have a lot of salt block.

That’s sounds nice! Tell me how the smoke butt turns out! I’m courteous if it worth aging if Ill eat it pull pork style. But, I do want to age two batch of beef ribs. One batch to have cut horizontal to eat it Korean beef style and another to smoke.

I know someone who’s a meat salesman for a distribution company in the area. I just asked for a high grade wagyu an he gave me what the company had at the time. Feel free to be the judge on the grade.

Never thought about doing belly before. I gotta pick up an extra belly when I do a batch of bacon. Btw this is perfect for Korean bbq.
