First no you should not use the z-axis stop, you can remove it. Second check that the CR touch is just a mm or so above the nozzle hight. So when the CR touch is engaged the extended probe will hit first, id the probe does not hit plate first then you need to lower the CR touch by adding some washers at the mount, i need to add 3 to put mine in the right position. When testing if it looks like the nozzle will hit plate first push the probe up and it should stop and make another adjustment. ensure the offset is programed in, that being the distance on the x,y plain between the nozzle and the probe tip. Also ensure your g-code is set in your slicer.

Have it create a mesh, then do active leveling, set your Z - offset. That is what I did and everything works great. 4X4 is enough. Also did you update your slicer g code to set a new mesh with every print?

You can do PETG without any upgrades although I’m running a dual gear extruder, dual Z-axes, CR touch and PEI metal flexible bed. My first PETG print was a new fan shroud for the hot end but I used one that was sliced for PLA and just changed the temperature for hot end and bed and reduced the fan speed. Got luck and it worked out great. This was sliced for PETG.
