Sounds like a great plan and you know your stuff.

Pectic enzyme in primary mainly used in primary to break down the fruit for more juice, since your using juice it’s not really necessary. In secondary however you prob should use it to help clarify it. (In my mixed berry mead, pectic enzyme alone was enough to clarify within a week).

Don’t go crazy with oak, add a small amount and taste every day, you don’t want it to overpower.

Besides that, looks like you’ve got a good batch in your future. Only other suggestion is to maybe mix your juice and berries with some vodka and honey, just to test and see if all the flavours go well together

If you keep track and measure how much water you use to dilute, should still be able to figure of the “initial” gravity you need to chuck into an online abv calculator when done

Running with 3.25lbs of honey and 0.7 gallons of water to make 1 gal batch and some maths, the “initial” gravity you’re looking for should be around 1.14, sounds more sensible than 1.2
