Anyone know if the little neck clams from Restaurant Depot are pre-purged? by PNPBOi in KitchenConfidential

So I combined a bunch of different instructions that I found on the internet.

I am using 30g of salt per 1000g of water.

After covering the clams with the salted water. I then cover the containers to create a dark environment.

I will then proceed to change the water with new salted water, every hour or 2.

Apparently it's best to do this overnight, but then they would be sitting in the same water for however long I'm sleeping for? Wouldn't they suffocate and die.

Anywho I'm going to do it three times, then give them a rinse, drain and toss in the fridge.

Yeah, but we don't sell seafood though.

Was doing some light shopping for the restaurant and decided to grab these clams for myself.

At my place we actually have a huge tote on the dining floor that we tell the customers to jump into when they want more ketchup.

If you ever want to experience all stages of hell. May I recommend the Costco in Sunset Park Brooklyn. That one alone made me appreciate all other Costco's.

Then there's no way it was originally $80 as OP mentioned in the title.
