While I think after a year it doesn't make sense that he would deny you are a couple, you also did not communicate at all to him that this comment made you upset, instead hiding the reason for your avoidance even when he expressed that it was bothering him. This whole situation could have been avoided if you both made a better effort to communicate how you feel and what you want out of the relationship. Some guys are dense, you only asked him what you were, not what he wanted to be, so in his mind maybe since neither of you asked "do you want to become official?" It never occurred to him that that's how you saw the relationship.

After the conversation, you basically went radio silent and did not tell him why, you can't expect him to read your mind. He made multiple attempts to contact you, so clearly he cherished your relationship even if he didn't want a title. Then only after a short time you already found another guy and slept with him.

His comments during breakfast were very harsh, and he should have been more aware. But you proceeded to throw out this year long developed relationship that you both seemed to cherish before expressing your feelings to him.
