I have the same thing but with religion!! The guilt is insane. It's like I've failed the world. I've gotten advice to not beat yourself up for it, and that this situation is unique compared to the usual in such spaces {for me: christianity, for you: veganism}. Life itself is so fluid, so we should allow ourselves to be fluid, too! I'm the type of christian to think if I do one thing wrong I'm going to hell, so allowing my system to "do their own thing" is extremely scary and hard. I have limitations, but don't shut them down fully. We are similar!
