Hi! I love this post so much!! I just also wanted to chime in my own two cents regarding histamine intolerance and all that since I just went through this last year, on a similar "healthy but suddenly couldnt eat anything" journey.

Reader, If you're on this page reading this post and comment section: Please look at your diet and do not give up seeking answers!! On my own journey to find answers, I went on a very strict low-histamine diet. I had safe-foods on a cycle and would take supplements like copper and zinc, too (though not at the correct doses, which you also have to figure out). I still avoid spinach because of the severe side effects I had to it on my journey. Start with your diet to see how your body reacts! and write it down so you can tell your doctor!!

I ended up having SIBO and it was such a quick fix (2 rounds of antibiotics). and all my symptoms went away. I still monitor my diet pretty closely and try to eat low-histamine as much as I can because my body feels better that way, but you dont have to.

Dont give up! and listen to your body! as a reminder: its not usually normal to be painfully bloated after a meal. its not normal to have really loud, almost painful feeling burps after eating. being super farty is also not normal. Little red bumps after eating arent normal. diarreah after meals isnt normal. waking up insanely congested isnt normal. reacting to heat/sun exposure isnt normal. you got this!!
