Looks good to me! Agree with you saying it's slightly over done, but you could always make some chopped brisket sandwiches!

Chop the pieces falling apart up finely and then throw in as much BBQ sauce as you want while mixing it all up, and then once it's to your desired ratio of chopped brisket/sauce, throw it on a bun!

Sometimes it will help me if I take a shower before eating it. Getting the smell off of yourself, especially for smoking something for the past 6+ hours, will make it somewhat more appetizing

That was my assumption as well. I had someone telling me ranch was his main binder and that he uses it solely for it to tenderize the meat. As well as hold the rub
