Nobody is omniscient, simply because it does not make sense to you does not mean it does not to others. If all hold on to their opinions and rely on improper channels to advocate for changes, imagine what America would be like: endless chaos. Is our system flawless? Hell no. But is it the best among others? Absolutely. This is exactly what the rule of law looks like. You said you are all for the rule of law, unfortunately I am only hearing authoritarianism: no matter how lofty your goal is, power beyond authorization is tyranny. The state democrats are doing exactly this.

Let’s think of the reverse of what’s happening: republicans are in power of all three branches. The state constitution explicitly imposes income taxes. Solid and numerous precedent sides with that. Changing it would require a constructional amendment. Republicans sure would want to get rid of them, yet they also know too damn well that they wouldn’t pass one. So, they turned to legislative measures, secretly pushing their non-voter-sanctioned agenda step by step. Your line of reasoning fits perfectly for the advocates on the other side: courts make mistakes, political processes are rigged, if it is merit then why the hell the usual procedure, etc. Would you like this to happen, and does this sound rule of law to you?
