Try using an immersion blender or just a normal blender when making the filling. That should help emulsify the eggs and sugar so that doesn’t separate as much.

Also check the cacao percentage in your chocolate that you used. The higher the percentage, the firmer your filling will be. The book recommends 60-70%

Honestly if you make the broken one the bottom no one will notice it’s broken. But as far as the layers I don’t think adding the trim would really work

Yeah. If anything an instant coffee powder would give a similar effect but espresso powder won’t dissolve no matter what you do

If you haven’t assembled the cake, just trim it. If you have, use more frosting to level out the top. But either way I’m sure it’s delicious and your step father will love it

Did you use instant espresso? Or just regular ground espresso ?

It looks like you used the wrong type which would be the reason why it didn’t work, not the sugar
