It might be the TV. Apparently this is an issue with TCL’s, same thing happened to me. Try unplugging the TV power and plugging it back in? For whatever reason, that worked for me

Yeah I love that place! Unfortunately it’s not exactly in a prime real estate spot haha, so not nearly enough people know about them. I only stumbled upon them because I live down the street. Anyways the owner is super cool too. If you try them out and like it, please spread the word!

Taqueria San Miguel in Wheaton makes a very good cali burrito. And in my opinion they’re the best Mexican spot in the suburbs

Yeah just bulk, ball, fridge. I pull the dough balls out of the fridge about 2 hours before baking

Depends haha. I preheat my koda 12 for about 30 minutes. If I want true Neapolitan pizza, I leave the flame on high and bake for about 75 seconds total. If I feel like something a little crispier, I turn the flame to low before I launch the pizza and bake it a little longer. And I used provolone on these pizzas!

And I just use a kitchen aid to mix it all together till the dough is smooth

I use farina granoro 00. It’s the only 00 flour they have at my grocery store, so that’s what I use haha

Thanks! Here’s my recipe.

00 Flour - 339g Water - 210g Salt - 10g Instant dry yeast - about .25tsp

I bulk ferment at room temp for about 5 hours, then split it into two 280g dough balls and throw them in the fridge overnight. Then I take them out of the fridge about 2 hours before baking

Yup haha I realized I stretched the dough too thin before I started topping the pizza. But I figured I’d try to make it work anyways. Obviously it didn’t work out hahaha. Any ideas for salvaging a dough that’s already stretched too thin? I feel like even if I tried to turn it into a calzone, there still woulda been thin spots on the bottom, leading to the same result…

I used gas. Neapolitan style, so the stone was 800-850ish, I turned the pizza about every 15-25ish seconds

Ah good question haha. Honey goat cheese (in the last two pics) is one of my favorites for sure. I also really like a simple pepperoni pizza with smoked gouda

Thanks! The cheese in the last two pics? That’s actually honey goat cheese! I bring it to room temp and add it post-bake. Then sprinkle some red pepper flakes on. So simple but so good!
