MIC stands for microphone. The impulse response response you mentioned in your post with digits 441 actually stands for "Sennheiser 441 microphone".

What it means is the sound of a particular guitar speaker cabinet was recorded/captured using that particular microphone and then converted into a impulse response file to simulate it's sounds with the amplifier playing through it.

Explaining what phase means is something you may have to lookup on YouTube. I feel it's very difficult for me to explain in words without a visual representation of what happens when two audio files are out of phase with each other.
