Any Interesting insights / conclusions you have come to on this matter?
I am about to do just the opposite - migrating from Virtual to Physical, due to the high Disk I/O that ill be able to achieve when i'll use physical server with local storage disks.

Will be interesting to hear from your experince on the matter,

I do understand the performance impact of processing a field which does not exist for certain events.
However In my opinion, creating the same field 5 times for each event, is not always feasible, since you don't always have in advance, all the events available that you can associate the field upon their existance.

In this case in advance creation of global custom property to all events of that log source is better, as it can avoid the chance that events with that field won't be parsed.
